Cutless gloves actually have a rating.  It's a 1-10 scale.  A C2 means the cut resistance level is a 2.  Most gloves will have the cut rating on the back hand of the glove.  There is also puncture resistance, and that has it's own rating.  Some of these gloves get Kevlar knitted into them to provide extra resistance to cuts.  There are arm sleeves you can buy that are cut resistant, and help with a variety of tough jobs.  In addition you can get knuckle guards, and finger guards to defend against crippling joint smashes.  It's pretty amazing how far the glove has come in the last few years.  For a lot of jobs, it's about maintaining dexterity as much as possible while keeping price point low.  You want everyone to be protected, because you don't want your good employees or yourself out of commission.
